Tea

A note on tea posts:

Any post about tea on here is usually because I have new tea and Im tasting it for the first time and reviewing and understanding it so i do it “gongfu” style: ~150ml water 8-10g of tea, 5 second steeps unless noted otherwise. Water is filtered to lower hardness and adjusted for PH.

I usually drink a fast and loose version of gongfu at home casually, more water, smaller tea amounts, longer steep times. Also grandpa style.

7542 1601. 2016. This tastes fine. Gets a bit spicy a bit too fast if youre not careful, but thats not too bad either. I cant detect anything negative in its ageing. Nice aroma that becomes very sugary smelling, with a good mouthfeel on later steeps. Heres a few TeaDB episodes about 7542. https://youtube.com/playlist?list=PLlDugFG1QXXiefOo-HwmcGwbduvVGL_vV&si=W3BmaJR-trzrLkS4

Xin Chải White Spring 2025 Nice interesting floral note, a light sweetness, flavour becomes mild herbal wheatgrass, I thought there was some light bitterness on the 5th steep, maybe? (5x5sec), light barley tea, slight vegetal sweetness on the 6th steep, it just keeps going, lightly on. This was one of two samples with a cake of ...
  • Tea note 15082025
I break up my tea, trying to keep as much leaf shape as possible, leaving any “chunks” that will only result in flakes, and store it in containers for use on my counter. I do this to half of a cake and then store the other still intact half in a mylar bag with a ...

Yunnan Sourcing 2024 “Autumn Suan Zao Shu” Old Arbor Raw Pu-erh. Image is the 4th or 5th ~5 second steep. Nice floral aroma, strong encompassing mouthfeel. There is initially some light sourness which matches nice with the aroma. The bitterness builds creating a lot of returning sweetness.
  • 2024 Moon Bear 27072025
Mild broad bitterness that transforms into a lot of coolness and almost menthol. Green grass, a slight umami of wheat or barley tea. Chamomile and bright vegetal aroma. Eventually some returning sweetness. Very Good.
